Description
Although quinoa generally gets grouped with grains like oats and barley, it is actually a pseudocereal grain. Meaning that it is basically a seed that’s cooked and eaten similarly to a grain. Examples of pseudocereal grains include brother buckwheat and cousin amaranth.
Quinoa contains the following to just name a few:
- antioxidant and anti-inflammatory plant compounds
- relatively high protein
- high in important vitamins & minerals
- magnesium, potassium, iron, fiber, and folate, a vitamin that’s very important during pregnancy to help fetal growth and development
